Sunday barbecued ribs (dry rub not sauce), turnip greens with diced turnips, and black eyed peas. Monday night, beef and noodles fattening I know, but oh so good! Tuesday cubed steak, broccoli and brown rice. I am not sure about Wednesday-Friday yet. But Saturday we are going to a PowWow and there will be buffalo and fried bread so I am sure we will eat poorly that day. Sunday (Mother's Day) it will be my favorite. Cheese stuffed manicotti shells and a red sauce. YUMMY YUMMY YUMMY

You would ask that wouldn't you...lol
They aren't very good for you....hmmph

Okay enough complaining here goes:

Manicotti Shells
Ricotta Cheese
Mozarella Cheese
Fresh Grated Parmesan
Scallions
Garlic
Salt
Pepper
Mushroom Spaghetti Sauce

I chop the garlic and scallions and add them to a bowl with the cheeses. I add the salt and pepper to taste. I boil the manicotti al dente, and then run it under cold water until cool enough to handle. I stuff them with the cheese mixture, place in a casserole dish and top off with sauce, more mozeralla, and more parmesan. I bake at 350 until the cheese is lightly browned and bubbling.

Its the same problem for me. Its the problem of time also. Am trying my best to have a good diet but infortunately that need a lot of time to prepare all these dish. I think that i must give some time to my meal planner and think about what i can eat everyday!
